Dressing:

  •  1/3 cup orange juice concentrate (undiluted)
  •  2 tablespoons lime juice
  • 1 1/2 teaspoons minced habanero chile
  • 1/2 teaspoon salt

Salad:

  • 3 large carrots, shredded
  • 2 cups California seedless grapes, halved
  • 1 1/2 cups jicama, julienned
  • 1/2 cup minced fresh cilantro
  • 1/2 cup salted peanuts, coarsely chopped

Directions
In a small bowl, whisk together all dressing ingredients. In a separate serving bowl, combine salad ingredients. Pour dressing over the top. Toss to incorporate.
